Marseille is known for its various specialties, and we're not just talking about pastis or bouillabaisse! Navettes are the stars of Marseille's bakeries, and for good reason; the delightful scent of orange blossom, the crunchiness of the biscuit, and the little touch of butter for indulgence, just the thought of it makes your mouth water! What if our regional navette became a global star? It's possible, and we'll explain how!

A TEMPTING BISCUIT SHOP

The Biscuiterie José Orsoni is "the place to be" to taste delicious navettes, both traditional, original, and subtly flavored. The rue de la Blancarde has counted the biscuit shop among its small traders since 1996. The scents perfume the sidewalk and make passersby salivate even before stepping foot in the shop. Six years ago, Jean-Claude de Juli took over the biscuit shop and promoted artisanal and passionate production. Recently referenced in the Gault et Millau guide, the navette from the Biscuiterie José Orsoni is a real star in the city of Marseille and beyond the borders of the region.

WHAT IS THE MARSEILLE NAVETTE?

Eggs, sugar, flour, and orange blossom water, that's the basic recipe for the navette. A shape resembling a small boat, reminiscent of a canoe, not too thin tips, not too thick a body, the navette requires a certain technique that Jean-Claude de Juli took time to master. He chooses to add a hazelnut of butter to his preparation, a personal touch that does not detract from the traditional navette.

Jean-Claude de Juli loves his job, he enjoys giving pleasure to every customer who steps into his biscuit shop. Sold for export in different locations, the navette has conquered many palates, and even Parisians agree that the Marseille navette is worth the trip!

And Parisians are not the only fans… The biscuit shop is regularly contacted by foreign pastry chefs who also want to take advantage of the fame of our Marseille navette. But, being a small structure, Jean-Claude de Juli does not currently prioritize exporting abroad. However, he does not exclude the possibility. Indeed, in six years, he plans to enjoy a well-deserved retirement by passing the baton to his son. And the future leader of the biscuit shop has many projects for the famous navette! He thus wishes to make the export of this Marseille specialty abroad possible and regular, so that the navette is no longer simply the star of the region, but of the World!

What is certain is that the Marseille navette is not done being known and that this is just the beginning of a long conquest across the globe!
